Eggs and/or smoothies are the usual go to breakfast foods in our house. And for the most part, we don’t really get tired of them. However, on occasion, we like to make breakfast sausages to switch things up. However, these are probably most often made when we have brunch or breakfast for dinner.
Not only are these homemade pork breakfast sausages delicious, but they can also be made ahead of time and stored in the freezer to be pulled out for a really quick breakfast. Plus, since we are getting two whole pigs this year, this is a great way to use up ground pork without having to pay the processing to have breakfast sausage made by the butcher.

Breakfast sausage was inspired by the pork sausage my grandma would make growing up. Whenever we would stay overnight at her house growing up, she would fry up pork sausage made with rosemary in the mornings.
This recipe brings back the nostalgia of those mornings spent at my grandma’s with the roosters crowing at dawn, waking my siblings and I up. We would head downstairs to the delightful smell of rosemary pork sausage frying for breakfast. It was undoubtedly my favorite childhood breakfast! Paired with a sweet breakfast treat, these sausages make the perfect weekend breakfast or can also be made up ahead of time if you’re on the go.
Homemade Pork Breakfast Sausage Recipe
Homemade pork breakfast sausage is made with just six ingredients that I always have on hand which makes them the perfect breakfast to make up at a moment’s notice.
There are also a lot of different ways to enjoy homemade breakfast sausage. You can place them in a bagel or English muffin with some egg and cheese and have a breakfast sandwich. You can also use the ground pork mixture with some eggs to make a scramble or breakfast skillet. It is a simple yet versatile breakfast food which we always have the ingredients on hand for.

There are so many reasons why I love these pork breakfast sausage, but I will keep the list to my top reasons.
- Simple ingredients: Many store bought pork sausages contain nitrates and filler ingredients. This breakfast sausage contains only 6 all natural ingredients that you will recognize and regularly have on hand.
- Make ahead & freezer friendly: These can very easily be made ahead of time by mixing all the ingredients together. You can either cook them up and freeze them to pull them out and warm up or just mix the ingredients a fry the meat up fresh.
- Easy way to use a cost effective cut a of meat: Buying pre-made breakfast sausage can be expensive even if you’re just having you butcher process it as a part of buying a bulk pig. Homemade breakfast sausage is a great way to use the more cost effective ground pork.
- Easily customizable: Since you are making the recipe yourself, you can add, subtract, or adjust ingredients according to your preference.
- Transports on the go: The little sausage patty makes them easy to take on the go.
Ingredients
YIELD = 16 sausage patties
- 2 lb Ground Pork: Preferably pasture-raised.
- 2 Tbsp Maple Syrup: Adds a bit of sweetness to the rest of the bold flavors.
- 2 tsp Mustard or 1 tsp Ground Mustard: Provides a bold, tangy, and slightly acidic flavor to the mix.
- 2 Cloves of Garlic (minced) or 1 tsp Garlic Powder: Another bold flavor that gives the sausage an umami note.
- 2 tsp Rosemary: Gives the sausage a strong aromatic note. Herbal and earthy, this is my favorite flavor!
- 2 tsp Salt: Enhances and brings all the other seasonings together.

Instructions
Once you’ve collected your ingredients, the assembly and cooking process is really quite simple.
- Add all ingredients to a medium-sized bowl.
- Using a fork or another utensil that will help break the meat apart and mix in the seasonings, mix everything until combined. I just prefer to use my hands for this but if squishing raw meat between your fingers isn’t for you, I get it.
- Once the ingredients are completely combined, divide the meat and form it into 1/8 pound patties.
- Preheat a skillet over medium-high heat and add a tablespoon of fat to pan. Place the patties in the pan and cook for 2-3 minutes each side.

What is the best way to freeze and store homemade pork breakfast sausage?
If you want to store the breakfast sausages to pull out for a quick breakfast in the morning. Lay them out individually on a piece of parchment paper on a baking sheet after cooking them. Place the baking sheet in the freezer for about 8 hrs or until frozen solid. This will prevent them from sticking together and make it easier to pull out as many as you want. Once they have frozen, transfer the patties to an air tight container to prevent freezer burn. Store in freezer and pull patties out as needed.
How long will the pork sausages store for in the freezer?
The breakfast sausages will last up to 6 months and still taste extremely fresh. You will likely even last up to a year depending on home many times you open the air tight container. However, they may start to lose some of their flavor and freshness at this point.
Can I substitute different herbs for the rosemary?
Don’t care for rosemary or don’t have any on hand? That’s totally fine. Sage is a great alternative to rosemary or I also like marjoram. Really you could substitute any herb that you feels pairs well with the other flavors.
Are there other ways to enjoy homemade pork breakfast sausage?
There are lots of ways to enjoy homemade breakfast sausage. You can place them in an english muffin or bagel with some egg and cheese and have a breakfast sandwich.
